Peanut butter banana oatmeal cookies (vegan/GF)

I made these cookies for a recent ritual and they went down very well. They aren't too sweet and are not only vegan but gluten free as well.




225g/2 cups oats

2 ripe bananas, mashed

125g/1/2 cup peanut butter (or other nut butter)

2 tablespoons maple syrup

1/2 teaspoon salt

1 teaspoon vanilla extract

45g/1/4 cup chocolate chips


Preheat the oven to 350F/180C/Gas 4.

Mash the bananas and add in the rest of the ingredients, mix ell.

Drop spoonfuls of the cookie dough onto a baking sheet and flatten each one slightly.

Bake for 15 minutes.
