Butter Cake

Simple is sometimes the best...

250g/8.8 oz butter, softened

225g/8 oz sugar

2 teaspoons vanilla extract

3 eggs

400g/14 oz self raising flour

160ml/5.6 fl oz milk

Preheat the oven to 180C/350F/Gas 4.

Grease and line a 9"/23 cm cake tin.

Whisk the butter, sugar and vanilla together until light and fluffy.

Alternate adding a little of the egg, then some of the flour then a little milk, stirring to combine. Keep alternating until you have all the ingredients mixed together.

Spoon into the tin and smooth the top.

Bake for one hour.
