Soda bread is usually eaten as savoury, but this one added dried cherries and chocolate chips to give a sweet kick.
450g/15.9 oz plain/all purpose flour
4 tablespoons dark brown sugar
1 teaspoon bicarbonate of soda
3/4 teaspoon salt
75g/2.6 oz butter, cold
40g/1 .4 oz rolled oats
100g/3.5 oz chocolate chips
50g/1 .7 oz dried cherries, chopped
375ml/12 fl oz buttermilk (or milk with a spoonful of lemon juice added)
Preheat your oven to 425F/220C/Gas 7. Line a baking sheet with baking parchment.
In a large bowl mix together the flour, sugar, bicarbonate of soda and salt. Grate the cold butter into the dry ingredients and mix.
Add the rolled oats, chocolate chips and dried cherries, mix to coat them in the flour.
Pour in the buttermilk and mix to combine.
Drop the mixture onto a floured surface and knead gently a few times, don't over handle it.
Shape into a rough disc and place on the baking sheet.
Using a sharp knife score a deep cross into the top of the dough.
Bake for 45 minutes.
Serve warm, spread with butter.
