Combining the beautiful flavour of pineapple with the caramel goodness of brown sugar...yummylicious.
2 eggs
185g/6.5 oz sugar
400g/14 oz (one tin) crushed pineapple, including the juice
300g/10.5 oz plain/all purpose flour
1 teaspoon bicarbonate soda
1 teaspoon baking powder
65 g nuts, chopped
Pinch salt
Topping:
113g/4 oz butter
100g/3.5 oz brown sugar
65g/2.3 oz nuts, chopped
Preheat your oven to 180C/350F/Gas 4.
Mix the flour, bicarbonate soda, baking powder and salt together.
In a separate bowl mix together the eggs, sugar and crushed pineapple.
Pour the wet ingredients into the dry and stir to combine.
Fold in the chopped nuts.
Spoon the mixture into a loaf tin (9" x 5") that has been lined with baking parchment.
In a small pan melt the topping butter and sugar together, allow it to boil for a minute. Spoon the sauce over the batter and sprinkle the chopped nuts over the top.
Bake in the oven for 45-50 minutes.
