Dunking Cookies

Hubby was after some cookies to dunk in his cup of tea, so I made these. They are yummy, kinda like a cakey cookie and dunk perfectly.



500g (17 1/2 oz) plain/all purpose flour

190g (6 1/2 oz) sugar

2 eggs

100g (3 1/2 oz) butter (room temp)

10g (2 level teaspoons) baking powder

50-75ml (1 3/4 to 2 fl oz) milk

1 teaspoon grated nutmeg

2 tablespoons demerara sugar


Pre-heat the oven 180C/350F/Gas 4.


Pop all the ingredients into a mixing bowl and mix until it comes together as a dough, don't over mix.


Roll out on a lightly floured surface, to a depth of about 1cm.


Cut into rectangles and sprinkle with brown sugar.


Place on a lined baking sheet and bake for about 20 minutes.


Allow to cool then make a cuppa and dunk away.


Options:

Replace the nutmeg with ground cinnamon or mixed spice

Replace the nutmeg with the zest of a lemon, lime or orange
