Oats, coconut and a hint of cardamon with the added sweetness of water icing - a real boost to your day.
100g/3.5 oz oats
150g/5.3 oz plain/all purpose flour
75g/2.6 oz self raising flour
100g/3.5 oz brown sugar
75g/2.6 oz desiccated coconut
55g/ 1.9 oz sultanas
1 teaspoon ground cardamon
125g/4.4 oz butter
79g/2.5 oz golden syrup/corn syrup
1 egg
Icing
120g/4.2 oz icing/confectioner's sugar
1 to 2 tablespoons water
Preheat your oven to 350F/180C/Gas 4.
Grease and line a 18 x 28cm tin with baking parchment.
Mix together the oats, both flours, sugar, coconut, sultanas and cardamon.
In a small saucepan melt the butter and golden syrup over a low heat. Stir until melted.
Add the butter mixture and the egg into the dry ingredients. Mix until well combined.
Spoon into the prepared tin and spread evenly.
Bake for 20-25 minutes.
Allow to cool.
Mix the icing sugar with the water and spread over the oat slice.
Allow to set before slicing.
Variations Replace the cardamon with ground ginger or mixed spice.
Replace the sultanas with chocolate chips or dried chopped apricots or cherries.
Add orange juice to the icing instead of water.
