I make a chocolate cake every week of some variation (gotta feed a hungry teenager). This one was declared one of the best yet. It is also one of the easiest cakes to make.
180g/6 1/2 oz butter, melted
175g/6 oz self raising flour
1 teaspoon bicarbonate soda
3 tablespoons cocoa powder
100g/3 1/2 oz sugar
2 tablespoons golden syrup
2 eggs
150ml/5 fl oz milk
Filling
100g/3 1/2 oz butter
220g/8 oz icing sugar
40g/1 1/2 oz cocoa powder
A little milk
Preheat your oven to 350F/180C/Gas 4.
Line two 20cm/8" cake tins.
In a bowl mix the cocoa powder, flour, bicarbonate soda and sugar.
Now add in the golden syrup, eggs, melted butter and milk.
Beat until smooth.
Pour the batter into the tins.
Bake for 20-25 minutes.
Leave to cool.
for the filling whisk the butter, icing sugar and cocoa butter together until it is light and fluffy, if it is too stiff add in a little milk.
Fill the cake.
