I love a good peanut butter cookie and this one just happens to be vegan and with the option for gluten free too.
250g/9oz peanut butter - creamy or crunchy, you can also use almond butter instead
225g/8 oz sugar
6 tablespoons milk (any kind, I used almond milk)
2 teaspoons vanilla extract
120g/4 1/4 oz flour - all purpose or a gluten free blend
1 teaspoon bicarbonate soda
Pinch of salt
Preheat your oven to 350F/180C/Gas 4.
Line a baking sheet with parchment paper.
Mix together the peanut butter and sugar, whisk until creamy.
Stir in the milk and vanilla.
Add the flour, bicarbonate soda and salt, mix until combined. It will be a stiff dough.
Take spoonfuls of the mixture and roll into balls, about a tablespoon and a half for each one. Place them on the prepared baking sheet and using a fork slightly flatten the top of each one.
Bake in the oven for 10-13 minutes.
Makes about 20 cookies.
