Plum Muffins

Fruity delicious plums added to soft lush muffins, who could want more?


300g/10.6 oz plain/all purpose flour

2 teaspoons baking powder

1/2 teaspoon bicarbonate soda

120g/4.2 oz sugar

1 teaspoon mixed spice

2 eggs

110g/3.9 oz vegetable oil

270g/9.5 oz plain yogurt

6 medium size plums, pitted and chopped

Sugar for sprinkling


Preheat your oven to 180C/350F/Gas 4.

Mix the flour, baking powder, sugar and bicarbonate soda in a large bowl.

In a separate bowl mix together the eggs, oil and yogurt.

Pour the wet ingredients into the dry and mix until just combined, do not over mix. Gently fold in the chopped plums.

Spoon into muffin cases (8 large or 12 smaller).

Sprinkle with brown sugar.

Bake for 20 minutes.
