We had a box of shredded wheat cereal that no one was going to eat (basically because it tastes like straw...). I knew there must be a baking use for it...here is one of two recipes I made (the other is shredded wheat cookies). These are yummy and bear no resemblance to straw in any form.
113g/4 oz butter, melted
180g/6.3 oz shredded wheat, ground
400g/14 oz sweetened condensed milk
200g/7 oz dark chocolate chips
100g/3.5 oz dessicated or flaked coconut
150g/3.5 oz chopped nuts
Preheat your oven to 350F/180C/Gas 4. Line a 13x9" baking tin with baking parchment.
The shredded wheat needs to be blitzed in a food processor, once it is ground add in the melted butter and whiz to mix.
Tip the mixture into the prepared tin and press into the bottom evenly.
Now layer up your other ingredients into the tin, the chocolate chips, coconut and nuts.
Lastly pour over the condensed milk, allowing it to soak into the other items.
Press the top down with the back of a spoon.
Bake in the oven for 25 minutes.
Cool completely before cutting into slices.
Variations:
This would work with other cereals such as weetabix.
Change the dark chocolate chips for milk, white or caramel
Swap out the chocolate chips for dried cranberries or sultanas
Add in a teaspoon of mixed spice or ground cinnamon
