Chocolate cake in the form of a cookie and covered in chocolate icing, what more could you want?
115g butter, room temperature
75g sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon baking powder
Pinch salt
200g plain/all purpose flour
75g chocolate chips
Icing:
115g butter
2 tablespoons cocoa powder
3 tablespoons milk
300g icing/powdered sugar
Line a baking sheet with parchment paper.
Preheat your oven to 350F/180C/Gas 4.
Beat the butter and sugar together until light and fluffy.
Stir in the egg and vanilla extract.
Mix in the baking powder and salt.
Gradually add the flour, mixing until combined. It will be a thick dough.
Melt the chocolate chips either in the microwave or in a bowl over a pan of simmering water.
Add the melted chocolate to the cookie dough and stir to combine.
Pop tablespoon size scoops of the dough onto the prepared baking sheet.
Bake for about 8 minutes. Don't over cook as they will dry out easily. Remove from the oven but leave them on the baking sheet.
In a saucepan over a low heat, melt the butter, cocoa powder and milk, whisk until combined.
Remove from the heat and stir in the icing/powdered sugar.
Spoon the melted icing over each warm cookie, allow to cool and set.
