Chocolate Sprinkle Cookies

These are good chocolate cookies, but the addition of the sprinkles adds another dimension.


250g/8.8 oz plain/all purpose flour

50g/ 1.8 oz cocoa powder

3/4 teaspoon bicarbonate soda

1 teaspoon salt

225g/8 oz butter, softened

300g/10.6 oz sugar

1 egg

2 teaspoons vanilla extract

150g/5.3 oz chocolate chips

Sprinkles


Preheat your oven to 350F/180C/Gas 4.

Line two or three baking sheets with parchment paper.

Mix together the flour, cocoa powder, bicarbonate soda and salt in a large bowl.

In a separate bowl whisk together the butter and sugar until light and fluffy. Add the egg and vanilla and mix until combined. Add in the flour mixture and mix together, then stir in the chocolate chips.

Take 2 tablespoons of mixture at a time and roll into a ball, roll this in the sprinkles.

Place on the baking sheet, leaving plenty of room as they will spread.

Bake for 12 minutes.

Leave to cool.
