Coconut Flour Chocolate Cookies

In my quest to work with alternative flours I have been testing out coconut flour. It does smell of coconut but the flavour doesn't seem to transfer to the finished baked goods. However it does soak up liquid (much like cornflour does) and it gives a slightly grainy texture. Our household found there was a slight aftertaste too. I think this one will be down to personal taste!




55g/2 oz coconut flour

35g/1 .2 oz cocoa powder

1/2 teaspoon bicarbonate of soda

Pinch of salt

2 eggs

75g/2.6 oz maple syrup or honey

65g/2.3 oz coconut oil (melted but not hot) or vegetable oil

100g/3.5 oz chocolate chips


Preheat your oven to 180C/350F/Gas 4 and line a baking sheet with baking parchment.


Mix the flour, cocoa powder, bicarbonate of soda and salt together.


In a separate bowl whisk the eggs, maple syrup or honey and coconut/vegetable oil together.


Pour the wet ingredients into the dry and mix to combine.


Stir in the chocolate chips.


Scoop spoonfuls of the mixture onto the prepared baking sheet, I use an ice cream scoop. Slightly flatten the top of you want flatter cookies.


Bake for 13-15 minutes.
