Honey and Oat Cookies

Egg free, dairy free and full of oats with no added sugar - yummy and possibly quite good for you...they can even be made gluten free. If you want to make these vegan you could replace the honey with maple syrup.



100g/3.5 oz oats

40g/1 . 4oz plain/all purpose of GF flour

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon baking powder

Pinch salt

60g/2.1 oz melted coconut oil

75g/2.6 oz honey

2 tablespoons milk (any kind)

1 teaspoon vanilla extract

2cm fresh grated root ginger (optional)

60g/2.1 oz sultanas


Preheat your oven to 350F/180C/Gas 4.

Line a baking sheet with baking parchment.

In a large bowl mix the oats, flour, cinnamon, nutmeg, salt, baking powder, sultanas and vanilla extract together.

In a separate bowl whisk together the coconut oil, honey, milk and grated ginger.

Add the wet ingredients to the dry and mix to combine.

The mixture may seem a bit wet, leave it to stand for five minutes and it will magically stiffen.

Place spoonfuls of the cookie mix onto the baking sheet, pressing it down a little with the back of a spoon. Leave space between each cookie for them to spread a little.

Bake for 10 minutes until golden.

Let them cool on the baking sheet.


Variations:

Replace the sultanas with chocolate chips or chopped nuts
