Soft Sugar Cookies

Soft, moorish and ever so yummy! This recipe makes a huge batch, so you could halve the recipe.


225g/8 oz butter, softened

250ml/8.5 fl oz vegetable oil

225g/8 oz sugar

125g/4.4 oz icing/confectioner sugar

2 large eggs

1 teaspoon vanilla extract

680g/24 oz plain/all purpose flour

1 teaspoon bicarbonate soda

1 teaspoon cream of tartar


Preheat your oven to 190C/375F/Gas 5.

Beat together the butter, oil and both sugars. Gradually beat in the eggs then the vanilla. Mix in the flour, bicarbonate soda and tartar. Stir until combined.

Drop spoonfuls of the mixture onto ungreased baking sheets, leaving space as they will spread.

Bake for 8-10 minutes.
