Spinach and broccoli soup
Oh, this is such a glorious vibrant green colour! Actually, it would make a good ‘wicked witch’ soup for Samhain/Halloween too.
2 tablespoons olive or vegetable oil
1 large onion, chopped
2 garlic cloves, crushed
1.5 litres/3 pints vegetable stock
3 large potatoes, diced
2 heads of broccoli, chopped
3 large handfuls of spinach leaves
Salt and pepper
Heat the oil in a pan and sauté the onion and garlic for about five minutes until it starts to soften. Add the stock, potato and broccoli. Simmer for about fifteen minutes, until the vegetables are tender.
Stir in the spinach and cook for a couple of minutes.
Remove from the heat and blitz in a food processor or with a blender. Season with salt and pepper.
Reheat and serve.
Use half broccoli and half cauliflower for a thicker soup.
